The motsunabe, made with small intestines from Miyazaki-produced Japanese black beef, is a masterpiece carefully prepared by a skilled chef.The secret to making melt-in-your-mouth tripe is to cut it into large pieces so that you can easily taste the fat, and cook it slowly in a large pot. This method of preparation results in a melt-in-your-mouth tripe with no unpleasant odor! In addition to the tripe, it is packed with other ingredients such as chives, green onions, and tofu, making it a very filling dish.
